Herb-marinated lamb loin chops
This is the herb marinade we used to put on our butterflied legs of lamb before they became so insanely expensive we couldn't put them on the menu any more. Loin chops offer something for everyone - lean and tender fillet bits, crunchy tails and, best of all a bone to chew!
Lamb loin chops, rosemary, oregano, parsley, lemon zest, garlic, salt, pepper, olive oil.

This would make a great spread with the super greens risoni salad and eggplant Parmigiana; otherwise, go old-school with mash and a pile of buttered peas.
