Is it authentically Mexican? Nahh. Is it an unapologetic crowd-pleaser? You betcha. You had us at cheesy cornbread, but using it to top a vegie-laden pie of Mexican-spiced beef ‘n’ beans? Game over. A no-washing up wonder that goes from freezer to oven to table in the time it takes for the cornbread to bake to puffy golden deliciousness and the filling to be piping hot. Dig in. 

To Serve

An old-school salad of crisp iceberg is the go here, with guacamole and sour cream on the side.

Remove plastic film and preheat oven (FF) to 200C. For best results cook from frozen. FROZEN: cook for approximately 55 minutes or until golden across the top and piping hot. If getting too dark loosely place a piece of foil on top. DEFROSTED: cook for approximately 25 minutes or until golden across the top and piping hot.

    Great weeknight dinner.

    This has become a regular mid-week meal in my household. Tasty and hearty chilli with a cheesy soft cornmeal topping. It goes well with a Mexican salad kit from the supermarket.
