For lazy Sunday brunches (ah, we can dream...) or midweek suppers on the go, this ready-made fritter batter of sweet corn kernels, salty haloumi, fresh coriander and spring onions will make your kitchen the coolest cafe around. Super easy to cook – if you can wield a tablespoon, you’re halfway there – and even easier to eat. Serve with smashed avo, chutney, rocket, smoked trout, bacon, sweet chilli sauce and/or sour cream. Maybe not all, but you get the picture. 

To Serve

Make burger-sized fritters and serve with smashed avo, a rocket salad and slow-roast tomatoes, adding smoked trout or bacon as it pleases you. Or cook smaller, canape-sized fritters for drinks or lunchboxes.



 

Ingredients

We don't add preservatives or additives to our meals - we cook with real ingredients, just like you would at home. We do occasionally use kitchen pantry staples that include some additives. For example, tomato sauce contains acetic and critic acid.

Defrost fully before cooking. Place a lightly oiled frying pan over a medium heat and spoon in the fritter mix (approximately 2 tablespoons per fritter), leaving space to flip them. Cook for 3 minutes each side or until golden and cooked through. Drain on paper towel and serve with sweet chilli sauce and/or smashed avocado.

    Delish and easy

    These were so easy to make ... if you had some smoked salmon or were willing to poach and egg, it would be like having a fancy brunch at home. Genuinely filling and I was able to use over several meals.

    A little bit fancy
