Oven: remove the film and cover with foil. Place it in a preheated 180C oven (FF) for 45 minutes (from defrosted) to 1.5hr (from frozen), or until heated through. Microwave: peel back a corner of the film and microwave for 7 minutes (from defrosted) to 12-14 minutes (from frozen), or until heated through. Serve with steamed rice and leafy greens. Tip: to feed more, remove the meat from the bone, shred it with 2 forks, and serve over rice. Microwaves and ovens vary, please adjust cooking times if necessary. This dish comes in a microwave-safe foil container. Ensure to place only one tray in the microwave at a time and that it has room to move freely.

We start by frying our homemade Massaman curry paste till fragrant before adding coconut milk, toasted peanuts, tamarind and kecap manis. We marinate the shanks in a dry spice mix before browning then pour over the sauce and slow-cook in the oven till soft and tender.
