Super loaded vegie rice

Wholesome, delicious and vegan to boot – this is one handy little package to stash away. We steam brown rice and add a whole colour-wheel of vegies (carrots, corn, edamame, mushrooms, onions and Chinese cabbage) and dish it up with a sachet of soy, sesame oil, ginger and maple syrup for you to toss through the finished dish, turning worthy into wow-worthy. Top with a fried egg and a squirt of sriracha or as a side to any dinner.  

To Serve

A quick, nourishing lunch or supper on the go, with a fried egg or pan-fried tofu to bump up the protein. Goes down amazingly well with little ones, too – and you can dish it up with almost anything!

DEFROSTED: remove the sachet of dressing, lay the film over the tray, and microwave for 3 minutes. pour over the dressing, stir and microwave for a further 1 minute, or until piping hot. FROZEN: remove the sachet of dressing and place in a bowl of warm water. Lay the film over the tray and microwave for 4 minutes. Pour over the dressing and stir, microwave for a further 2 minutes, or until piping hot. OVEN: preheat oven to 200 degrees. Remove the plastic film and sachet of dressing. Cover the tray with foil, and place in the oven till piping hot, then stir through the dressing.

    Healthy and kids love it

    I have been serving this great loaded rice to us including my grandkids and they love it. The flavour is great and the level of added veggies is terrific. A great way to get more vegetables into their meals. I sometimes add egg and a protein (ie. grilled chicken or prawns) to make it a complete meal, but it goes with a surprising number of other meals just as it is. Highly recommended.
