Defrost fully, then empty into a saucepan and place over gentle heat, stirring occasionally, until the sauce is piping hot and the prawns are just cooked and opaque. Serve with steamed jasmine or coconut rice. This is a saucy curry, so you can add some Asian greens such as Bok choy and/or sliced Chinese cabbage and heat gently till the prawns are just cooked. Take care not to overcook the prawns as they will become dry.Keep frozen. once thawed, do not refreeze. Defrost in refrigerator. Cook within 48 hours of removing from freezer and consume immediately. Do not reheat or refrigerate once cooked. This product contains raw prawns and must be cooked before consumption.

We make a coconut masala with spices, coconut milk and desiccated coconut and stir it through a gingery tomato sauce with tamarind and fresh green chilli. The idea is that you defrost and heat the curry and the prawns will cook only once, as the curry comes up to heat. We just hate twice-cooked seafood!
