Simple enough for the kiddies, sophisticated enough for adventurous palates, these free-range, boneless thighs are marinated in a Japanese-leaning, umami-rich blend of miso, spices, soy sauce and mirin, ready to BBQ or pan-fry, and come with an addictive miso-maple butter to melt over the cooked chicken for a glossy, irresistible finish. Head East with stir-fried greens and coconut rice on the side or West with salad and a baked potato. 

To Serve

This dish is so versatile: you can serve it with coconut rice and stir-fried Asian greens or with salad or slaw. And the cooked chicken and saucy butter can be sliced and tossed through noodles. Any leftovers will make for a delicious chicken sandwich, stuffed into a baguette with lettuce or cucumber and kewpie mayo.

Defrost fully, preheat a barbecue or lightly oiled frypan. Cook the chicken for 6-7 minutes each side over medium heat or until cooked through then spread the butter over the chicken while hot. Slice and serve with coconut rice, slaw or Asian greens.
