Creamy tarragon chicken and potato tray bake

Creamy tarragon chicken and potato tray bake

A family-friendly dinner that goes from freezer to oven to table, needing only a salad or greens on the side, with herby, lemony free-range chicken supremes nestled on a bed of roast baby potatoes and red onions and a classically French-inspired tarragon and mustard finishing sauce. What a total winner of a chicken dinner!!!

To Serve

Complete your dinner with the simplest of green additions, throw some chopped broccolini into the pan for the last 15-20 minutes of cooking, and your work here is done. If you have more time and inclination on your hands, steamed green beans, dressed with butter and slivered almonds or a bowl of buttered green peas would be lovely on the side. And a green salad never goes astray.

    Tender, flavourful, and filling!

Excellent dish for 2 for a cosy weekend dinner. The chicken is top-quality and so tender, and the potatoes crisp up so well in the oven. I pair with steamed veg for a full meal.
