This kind of sauce works well with a wider ribbon pasta, like fettucine or pappardelle, but there would be no shame in serving it with a chunky shape like penne or fusilli. A colourful vegetable gnocchi like pumpkin or spinach would also be delicious. Whatever the carb of choice, finish with some extra Parmesan, a good grind of pepper and serve a salad on the side, ideally with some bitter leaves like radicchio or endive into the mix.

DEFROSTED: pierce the film several times and microwave for 3 minutes. Peel back the film, stir and heat for a further 1 minute or until piping hot. FROZEN: pierce the film several times and microwave for 4 minutes. Peel back the film, stir and heat for a further 3-4 minutes or until piping hot. STOVE TOP: defrost fully and empty into a saucepan. Stirring occasionally until heated through.
