Panko-crusted free-range chicken tenderloins

Occupying the happy place between a nugget and a schnitzel, these elegant crumbed chicken tenderloins can play in either camp. Hungry small people to feed? Dish ‘em up with wedges and corn on the cob. Civilised dinner for two? Serve, under a cloche, with buttered mash, green beans and a squeeze of lemon. Leftovers make great lunchbox- or sandwich-fillers. 

To Serve

Serve with potato wedges, or buttered mash, with tomato sauce or aioli for dunking. Leftovers are great for lunch boxes, or their own or in wraps with avocado and lettuce – or go for gold and make your own chicken katsu sushi, with cooked tenderloins cut into strips.

Defrost fully, heat oil in a frying pan - about 5mm deep. Fry the tenderloins for 3-4 minutes a side or until golden and cooked through. Drain on paper towel before serving.
