Cheesy beef and black bean quesadillas

Cheesy beef and black bean quesadillas

A substantial snack on the run for hungry kids, WFHers or late-night freezer-raiders. All that stands between them and cheesy, beefy, melty Mexican goodness is six minutes and a sandwich press. We’ve even snuck in a load of veg – tomatoes, red capsicum, corn and beans – to tick every box. Too easy – and pretty near irresistible.

To Serve

Tbh, most people will just hoe right in, hot off the press or pan, with nothing more complicated on the side than hot sauce for the chilli heads. But you could easily dress these up as a more elegant lunch and serve with a cabbage slaw dressed with lime juice and guacamole or pico di gallo (diced tomatoes and red onion tossed with lime juice and coriander).

Ingredients

Pitta bread (37%) (wheat flour, water, wholemeal wheat flour, wheat starch, sugar, yeast, salt, mineral salt (450) (500), soy flour, vegetable oil (sunflower oil), preservative(262), vitamin (thiamin, folate)), minced beef (16%), mozzarella cheese (9%) (pasteurised milk, salt, cultures, non-animal rennet, anticaking agent (460), preservative (200)), tasty cheese (8%) (pasteurised milk, non-animal rennet, salt, coagulating agents, tapioca starch), onion, sweet corn, red capsicum, water, black turtle beans, tomato paste, olive oil, fresh coriander, garlic, salt, smoky paprika, cumin ground, coriander ground, cinnamon, star anise, cayenne pepper

    Quick Meal for the kids

I love this meal because I make my own guacamole and numerous salad veggies place them on the side and its done in less than 10 mins. Sometimes I have on the side with Soup instead of bread. Good value for money.

    So easy

I get two of these in every order. They are delicious and take no time at all to defrost and pop in the sandwich press. Great for unexpected teenagers dropping in!
