Defrost fully. Pat dry the fish with paper towel. Heat a lightly oiled fry pan and cook the fish for 2-3 minutes each side over moderate heat. Lower the heat and add the sauce, allow to simmer gently till the salmon is cooked to your liking. Serve with coconut rice or steamed jasmine rice and Asian greens or slaw.

The Firecracker sauce is a combination of soy sauce, Gochujang paste, tomato paste , garlic, ginger, chilli and brown sugar. The sauce is balanced so it's not too sweet or salty and the spice level is medium to hot.
