Two perfectly prepped pieces of skinless, boneless salmon get a punchy lift from a lip-smacking firecracker sauce – a sweet, salty, spicy (but not crazily so) number blending Korean gochujang chilli paste, soy sauce, tomato paste, brown sugar, garlic and ginger. Sear the salmon, pour over the sauce and dish up with coconut rice and stir-fried greens or as a super healthy salad flaked over Asian slaw. 

To Serve

This dish can go in a few different directions: dish it up as is, over coconut rice with stir-fried Asian greens or flake and toss through slaw, with or without softened rice vermicelli. Any leftovers make sensational rice paper rolls, with more slaw, herbs and crushed peanuts.

Defrost fully. Pat dry the fish with paper towel. Heat a lightly oiled fry pan and cook the fish for 2-3 minutes each side over moderate heat. Lower the heat and add the sauce, allow to simmer gently till the salmon is cooked to your liking.
