Slow-cooked beef and vegetable pie

Mmm, pie. This family-friendly dish of beef braised in veal stock and crushed tomatoes, with a healthy serving of roast vegetables tucked under its golden, butter-puff pastry lid, is the kind of food we all want to return to on a brisk winter’s evening, rubbing our hands as the aroma of baking pastry fills the house. Buttered mash on the side is probably compulsory but a hunk of crusty bread wouldn’t be out of place. 

To Serve

Buttered mash or crusty bread would be good with the pie's delicious gravy, as would a baked potato. There are plenty of vegetables in the pie but a green salad with a nice, sharp dressing is always welcome with pastry.

Remove plastic film and preheat oven (FF) to 200C. DEFROSTED: cook for approximately 35-40 minutes or until the pastry is puffed and golden brown. FROZEN: cook for approximately 45-50 minutes or until the pastry is puffed and golden brown. For a more golden pastry top, brush the pastry with a beaten egg or milk.

    Delicious! Pastry on top is light, crispy and brown (I glaze it first with an egg) and the filling has lots of beef and vegetables. So handy to pop in the oven. I serve with Dinner Ladies Buttered Mash and a small serving of frozen baby beans.

    Really enjoyed it!

    The serving size for 2 was very generous! We had enough for ourselves for lunch the next day, too. The beef was very tender and the veg melted in your mouth. Really liked this one. The pie crust also added a nice texture to it.
