A home-made schnitty is a thing of beauty – but crumbs and beaten egg over hands, benchtops, the kitchen floor? A little less so. We make our free-range chicken schnitzels the way you’d do it yourself- generous escalopes of breast fillet, dipped in egg and coated in panko crumbs – but jazzed up with a little thyme, lemon zest and Parmesan. No mess, no fuss. Just plain yum. 

To Serve

Fabulous with a potato gratin or buttered mash, with broccolini, a slaw or salad on the side. Leftovers make the ultimate chicken sandwich, with aioli, shredded iceberg and a few diced cornichons.

Free range chicken breast (63%), panko breadcrumbs (wheat flour, salt, yeast, dextrose, water), free range eggs, parmesan cheese (milk, salt, cultures, non-animal rennet), plain flour (wheat), thyme, salt, lemon zest, garlic powder, black pepper

Some Prep

Defrost fully before cooking. Heat oil (approx. 5mm deep) over medium heat in a frying pan and fry gently for 4-5 minutes each side or until golden brown and cooked through. Drain on paper towel before serving.
