We’ve taken liberties with our original Karen Martini recipe and it’s morphed into this deliciously simple (for you) tray bake of chicken supremes, smothered in chermoula paste and sauced with a lip-smacking, cold-busting mix of chicken stock, lemon, honey, currants and julienned ginger. Serve with cous cous or a rice pilaf – or even mashed potato - with plenty of dark green, leafy silverbeet or spinach on the side. 

To Serve

Serve with cous cous – small grained or pearl – mixed with chickpeas for extra sustenance and sprinkled with toasted almonds and spring onions. But for a midweek family dinner, buttered mash could easily be the go. Either way, a big salad or pile of steamed leafy greens, dressed with olive oil, garlic and lemon, would go nicely. 

Ingredients

We don't add preservatives or additives to our meals - we cook with real ingredients, just like you would at home. We do occasionally use kitchen pantry staples that include some additives. For example, tomato sauce contains acetic and critic acid.

Preheat oven to 200C (FF) and remove the plastic film. DEFROSTED: Cook for 25-30 minutes or until golden and chicken is cooked. Spoon the sauce over the chicken pieces before serving with steamed cous cous or rice and leafy greens. FROZEN: Cover with foil and cook for 20 minutes, remove the foil and cook for a further 25 minutes.

    Absolutley delicious!

    I would have this meal every day! The chicken was so jam packed full of flavour through out. The ingredients used were such high quality, the chicken was so tender and such large pieces. I was able to get a lunch time meal out of the serving as well.
