Prep, Cook & Serve


Pierce the film several times. Defrosted: microwave for 4 minutes or till piping hot. Frozen: microwave for 4 minutes, stir and heat for a further 3 minutes. Serve with creamy polenta, mash, crusty bread or any grilled protein. Microwave ovens vary, please adjust heating time if necessary. Keep frozen. once thawed, do not refreeze. Defrost in refrigerator. Cook within 48 hours of removing from freezer and consume immediately. Do not reheat or refrigerate once cooked. Remove the plastic lining from compostable tray before recycling. The recipe uses pitted olives but please be aware that some pits may remain.

How We Make It

We make the ratatouille sauce by cooking onions, garlic, thyme, and crushed tomatoes, till soft and sweet. We stir in roasted zucchini, eggplant and capsicum with pitted kalamata olives and cooked cannellini beans and finish the dish with fresh basil leaves.
