HERE'S HOW WE MAKE IT

Doh piaza (we are reliably told) means "two onions" and the onions in this deliciously deep, dark curry are used both in the curry paste - along with ginger, garlic, yoghurt, coriander and whole spices - and sliced and fried until golden brown and added towards the end of cooking. There's a little chilli but it's tamed by the yoghurt and the sweetness of the onions. Defrost before reheating gently in a saucepan or microwave, stirring occasionally, till piping hot.

lamb, onions, garlic, ginger, yoghurt, chilli powder, paprika, coriander leaves, coriander, nigella seeds, vegetable oil, cardamon pods, garam masala. (MILK)
