Pearl barley makes for a nicely separated risotto, which re-heats better than arborio, as well as being lower GI and nutritionally superior. We're not trying to pretend it's a genuine risotto but unless you feel like standing by the stove stirring for 20 minutes, we suggest that it's a fine thing in its own right. It sucks up the vegetable stock and gives a nutty, neutral backdrop to the punches of flavour provided by diced roast pumpkin and goats cheese along with rosemary, thyme, a touch of cinnamon and Parmesan.  We make it as a finished risotto and dish it up in a foil tray.

PLEASE NOTE: these trays are microwave safe but please ensure that you place one tray at a time in the microwave and it is able to move freely.

TO COOK INDIVIDUAL: Remove the plastic film and cover with foil.  Place into a preheated 180C oven and cook for 30 (from defrosted) to 50 minutes (from frozen), stirring occasionally during the cooking time, until completely heated through.  For a looser texture, stir in a little hot water or stock just before serving. To microwave, heat for 2 (from defrosted) to 6 minutes (from frozen), stir and then heat for a further 2 minutes.

TO COOK SMALL: Remove the plastic film and cover with foil. Place into a  preheated 180C oven and cook for 40 (from defrosted) to 60 minutes (from frozen), stirring occasionally during the cooking time, until completely heated through. For a looser texture, stir in a little hot water or stock just before serving. To microwave, heat for 5 (from defrosted) to 15 minutes (from frozen), stir and then heat for a further 4 minutes.

DEFROST INFORMATION: can be cooked straight from frozen or defrosted overnight in the fridge before cooking. Once defrosted, keep refrigerated and cook within 48 hours.

Cooking instructions are guidelines only. Microwave times checked in a 900W microwave oven. Ovens and microwaves vary; please adjust cooking times accordingly and ensure your food is piping hot (70C) before serving. 


Sprinkle with Parmesan and a grind of black pepper and serve with a salad that includes some bitter leaves like radicchio or endive.
