Turmeric Pilaf Rice
A colourful and delicious alternative to your everyday basmati rice. This pilaf is simmered with vegetable stock scented with sweet Indian spices like cumin, coriander and turmeric, studded with peas and currants, and finished with a sprinkle of parsley and toasted almonds.
FROZEN PRODUCT. Defrost in refrigerator. Once defrosted cook and consume in 48 hours.OVEN: preheat the oven (FF) 180C. Peel back the film and remove the tub of almonds, cover with foil and heat for 20 minutes (from defrosted) to 25 minutes (from frozen) or until piping hot.
MICROWAVE: peel back plastic film, remove tub of almonds, replace film loosely and place in the microwave for 3 minutes (from defrosted) to 5 minutes (from frozen). Stirring half way through.
Add the toasted almonds and scatter with chopped mint or coriander.
PLEASE NOTE: this dish comes in a microwave-safe container. Ensure that you place only one tray in the microwave at a time and that it has room to move freely.
