A colourful and delicious alternative to your everyday basmati rice. This pilaf is simmered with vegetable stock scented with  sweet Indian spices like cumin, coriander and turmeric, studded with peas and currants, and finished with a sprinkle of parsley and toasted almonds.

  • Individual:Serves one adult.
  • Small:Serves two adults.
  • Large:Serves 4-5 adults.
  • Extra Large:Serves 6 adults.

TO REHEAT SMALL: remove plastic film and tub of almonds, cover with foil and place in a preheated 180C oven for 20 (from fresh/defrosted) to 25 minutes (from frozen), or until piping hot. To microwave, peel back plastic film, remove tub of almonds, replace film loosely and place in the microwave for 1(from fresh/defrosted) to 3 minutes (from frozen). Stir, replace film and continue to heat for another 2 minutes.

TO REHEAT LARGE: remove plastic film and tub of almonds, cover with foil and place in a preheated 180C oven for 25 (from fresh/defrosted) to 30 minutes (from frozen), or until piping hot. To microwave, peel back plastic film, remove tub of almonds, replace film loosely and place in the microwave for 3 (from fresh/defrosted) to 5 minutes (from frozen). Stir, replace film and continue to heat for another 2 minutes.

PLEASE NOTE: these trays are microwave safe but please ensure that the tray can turn freely in the microwave and place one tray in at a time.

DEFROST INFORMATION: this dish is suitable for freezing.  May be reheated straight from frozen or defrosted overnight in the fridge.  Keep refrigerated and cook and consume within 48 hours.

Serve with chicken korma, tandoori salmon or any curry, with cucumber raita and/or chutneys.
