Crispy chicken wraps with smoked barbeque dressing
A crispy, smoky, salad-y wrap — it’s all a big YES from us. Lay out a wrap and fill it with shredded lettuce, cheese, tomato, thinly sliced red onion and avo. Top it with our crunchy panko-crusted chicken tenderloins and a drizzle of our recipe for smoked barbeque dressing (find it below). Wrap it up and pat yourself on the back for finding your new favourite lunch.
Sushi rolls
Our sushi go-to that's so simple to make at home. Make up your sushi rice with some rice wine vinegar a touch of sugar and a little salt and allow to cool before you get rolling. Lay out your seaweed, flatten out your sushi rice, and top it with sliced avocado and cucumber batons and your perfectly crisp panko-crumbed chicken tenderloins. Roll it up, seal with water, and slice into bite-sized beauties. Bonus points are given for a Kewpie drizzle and a chilli sprinkle on top for a creamy-spicy decoration.

Ingredients:
Smoked Barbeque Dressing Recipe
1 cup plain Greek yogurt
1 tbsp extra virgin olive oil
1 tbsp honey
1 lime (juice)
1½ tsp chipotle powder
1 tsp paprika
1 tsp garlic powder
1 tsp ground coriander
1 tsp black pepper
¾ tsp salt
Crispy Chicken Chopped Salad
1 cup cherry tomatoes
½ cup finely sliced red onion
1 x cucumber
1 avocado
¼ cup chopped Coriander
¼ cup cooked chopped bacon
2 cups chopped Lettuce
3 x The Dinner Ladies panko-crusted free-range chicken tenderloins sliced
Method:
Mix all the dressing ingredients in a small bowl and set aside. Now it’s time to chop!
Slice your cherry tomatoes into halves (or quarters if they are big) and place them into a large bowl. Cut your cucumbers into thick slices, then again into quarters and add to the tomatoes. Criss-cross the avocado in the skins and scoop out the cubes directly into the bowl. Finely chop the coriander, shred the lettuce and chop the cooked bacon and crispy chicken tenderloins into bite sized pieces.
Toss it all together with the sliced onion and drizzle over as much smoked barbeque dressing as you like.
