In the spirit of spooky season, we’ve whipped up something sweet using our Bake-at-Home Flourless Orange and Almond Cake mix. A very fun, extremely delicious excuse to get baking.
Ghost Cupcakes
Serves 6
These spooky little numbers are made from our Bake-at-Home Flourless Orange and Almond Cake mix, topped with orange cream cheese icing and white chocolate ghosts. Your artistic skills will determine whether they’re sweet and smiling or spooky and “abstract”, either way, it’s a very fun time.
Ingredients
1 x Bake-at-Home Flourless Orange and Almond Cake with Cream Cheese Icing
80 g white chocolate chips
10 g dark chocolate chips
Red food colouring
Yellow food colouring
6 muffin cases
2 toothpicks
Method
Defrost your Bake-at-Home Flourless Orange and Almond Cake mix. Once defrosted, spoon the mixture evenly into 6 cupcake tins lined with cupcake cases. Bake at 180°C for 20–25 minutes, then remove from the oven and let them cool completely.
While the cupcakes are baking and cooling, get started on the icing and chocolate ghosts.
For the icing:
Defrost the cream cheese icing and transfer it to a bowl. To create a lovely orange hue, add about 2 drops of red food colouring and 5 drops of yellow. Adjust the colour to your liking, then set aside.
For the chocolate ghosts:
Melt the white chocolate chips in a bowl. On a large piece of baking paper set over a tray or board, scoop a teaspoon of melted chocolate and use the back of the spoon to smear it in one direction to form a ghostly “body.” With a toothpick, draw two little “arms” on either side and a few wispy “tails” at the bottom. Repeat until you’ve made six.
Next, melt the dark chocolate. Dip the blunt end of a toothpick into the dark chocolate and use it to dot on eyes and a wobbly mouth for each ghost. Pop your chocolate ghosts into the fridge to set while you ice the cupcakes.
Once your cupcakes have cooled, spread them generously with the orange cream cheese icing. Carefully peel your ghosts from the baking paper and perch one proudly on top of each cupcake.
