Mother’s Day Brunch with Our Sweet Corn & Haloumi Fritters

Why go out when you can serve up a café-worthy brunch in your pj’s? Our sweet corn and haloumi fritter mix does the hard work, so you can focus on plating like a hero and toasting Mum with bubbles. Pop the apron on! It’s time to spoil Mum.  

 

Sweet Corn & Haloumi Fritters with Crème Fraîche & Hot-Smoked Trout

Ingredients 

1 packet of The Dinner Ladies sweet corn and haloumi fritter mix 
Neutral oil for frying 
200ml crème fraîche 
Juice of 1 lime 
200g hot-smoked ocean or rainbow trout, flaked 
½ bunch chives, finely snipped
1 tsp salmon roe  
Smashed avocado  
Lime cheeks, to serve 

Method

Cook the fritters according to the instructions on the label and keep them warm. In a small bowl, stir the lime juice through the crème fraîche until smooth and tangy, then set aside. Scoop out the avocado into a bowl and mash, adding a squeeze of lime juice. Plate up two fritters on a bed of spinach and top each fritter with a generous dollop of limey crème fraîche and a tumble of flaked trout. Top with salmon roe, a scatter of chives, and a lime cheek for squeezing — and feel very pleased with yourself.
