Vegetable cottage pie topped with cheesy potato mash

We have three non-negotiables when it comes to a cottage pie, and no, meat isn't one of them. First, it needs a hearty base. Ours is packed with borlotti beans and Puy lentils. Second, it needs plenty of flavour, which is why we begin with a classic mirepoix (that's French for onion, carrot and celery) before adding Dijon mustard and porcini powder for even more savoury goodness. Finally, it needs an outrageously good topping. A layer of roasted sweet potato and green peas sits beneath the most gloriously soft, undeniably delicious cheesy potato mash. To the vegans who loved our old vegetable cottage pie, we're sorry. The cheesy mash topping was simply too irresistible.

To Cook

Preheat oven (FF) to 200C. Remove the plastic film.
DEFROSTED: cook for approximately 30-35 minutes or until piping hot.
FROZEN: cook for approximately 50-55 minutes or until piping hot.
Serve with a green salad or steamed greens.
