This one starts out slooowww, with a marinated pork shoulder bubbling away in our kitchen until it’s fall-apart tender. It all finishes at your place with a glossy lick of apple cider caramel and a sprinkle of fennel salt. Perfectly soft, sticky, salty and spiced with fennel seeds, it’s got that signature Dinner Ladies touch of big flavour with barely a finger lifted.

To Serve

Break the pork into chunks and pour over those delightfully flavour-packed cooking juices. Finish with a sprinkle of fennel salt, leaving some on the side so guests can add more if they fancy.

DEFROST FULLY BEFORE COOKING. Preheat oven (FF) to 180 degrees. Place the sachets of sauce and fennel salt to one side. Drain and discard the cooking juices from the bag of cooked pork. Place the pork in an oven-proof dish (approximately 30cm x 20cm x 5cm) then cover with foil and cook for 30 minutes. Remove foil, pour over half the sauce and cook a further 20 minutes, baste with the remaining sauce halfway through and cook until piping hot. To serve, transfer to a platter, roughly break up the meat using two forks and drizzle with the pan juices. Sprinkle with a little fennel salt and serve any extra fennel salt in a small dish on the side. Ovens vary, please adjust cooking times if necessary.
