This quick, punchy dinner for one is easy comfort with big flavour. Chewy egg noodles tangle up with Chinese broccoli, carrots, red capsicum, spring onions and tender shredded pork, all coated in a soy–sesame dressing laced with the familiar curry-spiked flavour of Singapore noodles. Ready in minutes in the microwave, it’s the full takeaway thrill without the wait.

These Singapore noodles are perfect just as they are, but a sprinkle of fresh coriander on top never hurt anyone.

Peel back the plastic film and remove the sachet of sauce and discard the paper. DEFROSTED: Place the film back over the tray and microwave for 3-4 minutes. Then add the sauce, stir gently and microwave for a further 30 seconds. FROZEN: place the sachet in a cup of water. Place the film back over the tray and microwave for 4-5 minutes. Then add the sauce, stir gently and microwave for a further minute.
