Consider this your remedy for forgetting the soggy, overboiled Brussels of childhood and reclaiming the humble sprout as the spectacular side it can be. A flavour-packed tumble of roasted Brussels sprouts, dried cranberries and crispy shallots, with prosciutto ready to crisp up at yours. Finish with a maple mustard dressing and a scattering of shaved Parmesan at the table for extra points.

This is a brilliantly bold side to serve with your main Christmas protein. Just be warned, it may very well steal the show. For a little extra oomph, try tumbling in a couple of handfuls of finely shredded white cabbage.

Preheat oven to 200C. Peel back the plastic film from the tray. Remove the sachets and discard the paper. For best results, transfer the sprouts to your own paper lined baking tray - approximately 30x40cm. DEFROSTED: Drizzle the sprouts with half the dressing, place in the oven and cook for 10 minutes. Remove the tray from the oven, shake the sprouts, then lay the prosciutto over the sprouts in a single layer, return to the oven for 10 minutes or until the prosciutto is crisp. FROZEN: Drizzle the sprouts with half the dressing, place in the oven, cook for 15 minutes. Remove the tray from the oven, shake the sprouts, then lay the prosciutto over the sprouts in a single layer, return to the oven for 10 minutes or until the prosciutto is crisp. To serve, break the crisped prosciutto into shards, then toss with the sprouts and the shaved parmesan. Drizzle with the remaining dressing and serve as a side to any cooked Christmas protein
