A tiramisu with no coffee in sight! We’ve taken the traditional method of soaked sponge fingers layered with mascarpone cream and flipped classic flavours on their head for an Aussie summer table. Lush lemon curd, raspberry coulis and whipped mascarpone cream are layered between sponge fingers soaked in a zingy passionfruit lime syrup. Summer-misu? Chrissy-misu?! Whatever you call it, we love it.

To Serve

Serve simply with fresh a handful of fresh raspberries scattered around the plate.

If serving on a platter, transfer while still frozen and defrost in the refrigerator overnight. Alternatively, serve defrosted straight from the tray. Cut into 6 slices and serve topped with fresh raspberries if you like.
