Studded with toasted almonds, sunflower seeds, pepitas, cranberries and goji berries, our festive grain salad is a very lush side for your dinner spread. Great as is with our zingy lemon and mustard vinaigrette or level it up by tossing through some freshly chopped mint and parsley. Hearty, salad-y, grainy goodness.

A great companion to a roast dinner spread or perfect on its own as part of a vegetarian spread.


Ingredients

Cooked black barley (37%) (water, black barley), cooked pearl barley (37%) (water, pearl barley), cranberries, goji berries (2%), preserved lemons (lemon whole, lemon juice, spices). Dressing (olive oil, lemon juice, salt, honey, cumin ground, Dijon mustard (sulphites)). Nuts & seeds mix (5%) (almonds (1.7%), pepitas, sunflower seeds)

Defrost the salad and allow to come to room temperature. In a bowl, mix the salad with the dressing and nut and seed mix plus whichever herbs and salad leaves you like. We use coriander, mint, spring onions and rocket. For a warm side dish, peel back the film, remove sachet of nuts and dressing, replace the film loosely and microwave for 2 minutes, stir and heat for another 2 minutes, stir through the dressing and sprinkle with the seeds and nuts.
