You deserve a little bistro pizzazz at home. You know it, we know it, so here you are. This one requires a tiny bit of effort, but trust us, the yum-to-effort ratio is well worth it. Pan-fry the free-range chicken scallopine (that’s fancy-talk for thinly sliced chicken breast), then pour our creamy green peppercorn sauce with Dijon and parsley straight into the same pan and watch it bubble, thicken, and make you oh so glad you had this one in your freezer.

Our creamy mashed potatoes are the perfect companion here with a side of steamed greens. If you’re feeling adventurous, we also think this is oh-so-delicious with the chicken sliced into strips, pan-fried and tossed through pasta with the creamy sauce. A shower of Parmesan? Absolutely.

To Cook

Defrost fully. Remove the sauce sachet from the tray. Pat the chicken dry with paper towel and sear in a lightly oiled preheated frying pan for 3-4 minutes each side or until fully cooked. Transfer the chicken to your serving plates. Add the sauce to the frying pan and simmer gently for approximately 1-2 minutes or until heated through and thickening slightly. Pour the sauce over the chicken and serve with Dinner Ladies mash potato, rice or pasta and steamed greens.
Alternatively, slice the chicken into strips, sear in a hot pan till just cooked, add the sauce and simmer for 1-2 minutes before stirring through hot pasta.
