Some would say it’s the most important part of a roast dinner, and we definitely agree. With the stakes so high, we have you covered with our gluggable reduction of chicken and duck stock, scented with thyme and finished off with a dollop of redcurrant jelly for sweetness. Pass the boat! 

To Serve

Serve alongside your hero protein of prosciutto-wrapped chicken, brined turkey crown or roasted pork shoulder.

Ingredients

Duck stock (water, duck bones, onion, carrot, celery, tomato paste (tomato paste, water, citric acid), thyme, bay leaves, olive oil, parsley, pepper), chicken Jus (water, free range chicken bones, onions, carrot, celery, bay leaves), maize starch, red currant jelly (sugar, red current juice, pectin, citric acid), Dijon mustard (mustard seeds, vinegar, salt, sodium bi-sulphite), salt, pepper

Defrost fully then heat gently in a small saucepan or microwave-safe container, stirring occasionally, until piping hot. Serve with either the citrus-brined turkey or chicken, pistachio and cranberry ballotines.
