Thai vegetable and tofu curry with cashews

A Thai yellow curry that’s punchy and packed with SO much good stuff we don’t think there’s enough space here to say it all (but here we go anyways). Tofu, broccoli, red capsicum, baby corn, bamboo shoots and roasted cashews with a satisfyingly tingly level of chilli that keeps you topping your rice with more golden coconut sauce as you go.

To Serve

Serve on top our coconut rice and garnish with a handful of bean sprouts, fresh coriander and a squeeze of lime.

Ingredients

Coconut cream (coconut kernel extract, water), water, tofu (15%) (soybean extract 99.9% (soybeans, water), mineral salt (calcium sulphate), broccoli (11%), baby corn (8%), red capsicum (7%), galangal (galangal, salt), lemongrass, red onion, bamboo slices, cashew, garlic, tomato paste, sugar, Thai basil, tamarind paste (tamarind 65%, water), lime juice, kaffir lime leaves, salt, ginger, rice bran oil, turmeric, chilli, vegetable stock (sea salt, maize maltodextrin, natural vegetable flavour, yeast extract, spinach, celery, cabbage, canola oil, extra virgin olive oil, cane sugar, potassium chloride, parsley), coriander ground, sliced red chilli
