Super green soup with buttermilk and leek

There’s no fewer than eight (count ‘em!) vegetables in this light, super-nourishing soup, including broccoli, zucchini, spinach, peas and leeks. But would it be wrong to say, you can’t even pick them? They’re blended with stock into a uniformly smooth, sweet, vibrant puree, enlivened by the tang of buttermilk and a few subtle herbs and spices – a taste of the spring that’s on its way. Vegophiles, this one’s for you. And those with small vegophobes to feed – it's even more for them!

To Serve

Swirl in a dollop of yoghurt or creme fraiche, sprinkle with a few thyme leaves or parsley and serve with warm, crusty bread.

Defrost fully before heating. Stove top: transfer the soup to a saucepan and heat gently, stirring occasionally, till piping hot. Microwave: microwave in a microwave-safe container, stirring occasionally until piping hot. Serve with warm crusty sourdough.
