Spiced chicken traybake with coconut and lime

A warming, North African–inspired chicken tray bake with just the right hit of spice and citrus. Two free-range chicken marylands are marinated and roasted with sweet potato and eggplant, then finished with a fragrant sauce of coconut milk, chicken stock, lime leaves and toasted spices. Exotic enough to feel like a mini holiday yet easy enough to make on a Monday.

Complete this dish with fluffy couscous, steamed rice or a plate of grilled broccolini

Ingredients

Preheat oven (FF) to 180C. Remove the plastic film and sauce sachet. DEFROSTED: cook for 25 minutes, pour over the sauce and cook for a further 15 minutes. FROZEN: place the bag of sauce in a bowl of water and set aside. Cook for 45 minutes, pour over the sauce and cook for a further 15 minutes. Serve with broccolini or leafy greens. Ovens vary, please adjust cooking times if necessary.
