Sausage rolls with sneaky veg

A satisfyingly sausagey sausage roll, cunningly slipping cooked-down vegies and chickpeas under the cover of lean pork mince, all wrapped in delicious Careme puff pastry. We’d originally meant these as a kids’ snack/lunchbox filler but kids, watch your parents! The vegies aren’t the only ones being sneaky round here....  

To Serve

Serve with (what else?) tomato sauce. For cocktail or toddler sized sausage rolls, cut each roll into three before cooking. Cold sausage rolls make a great lunch-box filler too.



 

Ingredients

Puff pastry (33%) (wheat flour, butter (cream (milk)), water, salt, vinegar), pork mince, chickpeas, onion (7%), carrot (5%), zucchini (5%), red capsicum (4%), garlic, parsley, olive oil, salt, thyme, fennel seeds

Preheat oven (FF) to 200C. Place sausage rolls on baking-paper lined tray, brush with egg-wash or milk. DEFROSTED: cook for approximately 20-30 minutes or until puffed and golden brown. FROZEN: cook for approximately 25-35 minutes or until puffed and golden brown. Flip and cook for a further 5 minutes to crisp the bases of the rolls if needed. Serve with tomato sauce for dipping. To make mini sausage rolls, defrost and cut each roll into three, then cook until golden brown.
