Duck and water chestnut sang choi bau

We can’t resist sang choi bau at the best of times, but with the addition of free-range duck mince, we’re in lettuce-wrapped heaven. The contrast of textures and temperatures is what does it for us: warm, stir-fried duck, seasoned with the Chinese staples of Shaoxing wine, soy sauce, ginger and spring onions, with slippery diced shiitake and crunchy water chestnuts, all ready to be wrapped in crisp, cold lettuce leaves or tossed through noodles.  

To Serve

Garnish with extra spring onions, coriander, and chopped chilli, and serve tucked inside lettuce leaves. You can also make it go further by tossing it through noodles or serving it over steamed rice with stir-fried Chinese greens

Peel the plastic film back and remove the sauce sachet. Replace the plastic film over the tray. DEFROSTED: microwave for 3 minutes, add the contents of the sauce sachet, stir, heat for a further 1 minute or until piping hot. Alternatively, empty into a fry pan and gently heat till piping hot. Add the contents of the sauce sachet, stir and heat for a further 30 seconds. FROZEN: microwave for 5 minutes, add the contents of the sauce sachet, stir, heat for a further 2 minutes or until piping hot. Serve with extra chopped spring onion and coriander, fresh chili and lime if you like. Wrap in lettuce leaves or serve with rice or noodles. Microwave ovens vary please adjust heating times if required.
