Salmon tikka tray bake with turmeric spiced potatoes and cauliflower

You only have to look at the ingredient list to see the love that’s gone into this dish – we’ve marinated two beautiful salmon fillets in a home-made tikka paste, separately roasted potatoes and cauliflower in Indian spices (curry leaves, turmeric, cumin and fennel just for starters) and blended yoghurt, mint, garlic and lemon zest for a fresh finishing sauce. Your only job is to whack it in the oven and share the love.  

To Serve

Serve with the minty yoghurt sauce, a leafy green or cucumber salad and warm naan or flat bread. For a quick additional green boost, throw a handful of frozen baby peas into the tray five minutes before the end of cooking time.

Preheat oven (FF) to 200C. Remove the plastic film and sachet of minty yoghurt DEFROSTED: Drizzle the salmon and vegetables with some olive oil. Place the tray in the oven for 15-20 minutes or until cooked through and piping hot. Serve with a green salad and the minty yoghurt. FROZEN: Place the sachet of sauce in a bowl of water to defrost. Drizzle the salmon and vegetables with some olive oil. Place the tray in the oven for 25-30 minutes or until cooked through and piping hot.

    Salmon tikka bake

    We loved the salmon tikka bake! Flavours were incredible & this was convenient as well - a tasty & complete meal with veggies!
