This dish has the Mediterranean flavours we love with the comforting Dinner Ladies zhuzsh you love. Free-range chicken marylands are roasted with olive oil, thyme, rosemary, black pepper, paprika and salt till golden and crispy. Sitting atop a risotto-ish pearl barley number, cooked with chicken stock, tomato passata, leeks, garlic, parsley and a splash of wine. Comfort incoming!

To Serve

Complete this dish with a bundle of steamed greens or salad on the side.

Free range chicken maryland (47%), cooked pearl barley (36%) (chicken stock (water, free range chicken bones, onions, carrot, celery and bay leaves), pearl barley, water, leeks, tomato passata (tomatoes, salt), onion, white wine (sulphites), lemon juice, olive oil, parsley, garlic, salt, paprika, thyme), roma tomato, olive oil, paprika, thyme, salt, rosemary, black pepper

800g- 2 cooked marylands and pearl barley.

To Cook

Preheat oven to 200 degrees. Remove film. Pour 1/4 of a cup of water onto the pearl barley and drizzle the chicken with some olive oil. DEFROSTED: Cover with foil, cook for 15 minutes, then remove the foil and cook uncovered for a further 20 minutes or until chicken and pearl barley are piping hot. FROZEN: Cover with foil, cook for 35 minutes, then remove the foil and cook uncovered for a further 20 minutes or until the chicken and pearl barley are piping hot.

    Tasty and easy to prepare

    This is a very easy dish to prepare. The barley gives it a good base and the roast tomato a lovely fresh flavour. The chicken is tasty and the Maryland cut has plenty of meat.
