Ratatouille with roast vegetables and cannellini beans

Ratatouille with roast vegetables and cannellini beans

There’s a lot to love in this colourful, versatile dish. It’s packed with sunshine-y Mediterranean vegetables – roast zucchini, eggplant and capsicum – stirred through with a basil-scented tomato sauce, studded with punchy kalamata olives and finished with cannellini beans. Is it a side dish (it sure goes with a fine lamb chop)? Is it a vego main (toss through pasta or pile on bruschetta)? More importantly, do we care when it’s this damn tasty?

To Serve

As a side dish, this plays very nicely with grilled lamb or chicken or a pan-fried piece of fish. But equally, with a few tweaks, it can be the main event for a meat-free lunch or dinner: serve with crusty bread, toss it through pasta, use it to fill an omelette or pile onto bruschetta. How’s that for versatile?

Ingredients

We don't add preservatives or additives to our meals - we cook with real ingredients, just like you would at home. We do occasionally use kitchen pantry staples that include some additives. For example, tomato sauce contains acetic and critic acid.

Crushed tomatoes (tomato puree, citric acid), vegetables (54%) (zucchini, eggplant, onion, green capsicum, red capsicum), olives (olives, water, salt, vinegar, sunflower oil), great northern beans (8%), olive oil, garlic, basil, salt, thyme, white pepper

Delicious and Mindful of Vego diets

I respect anyone who puts beans in vego meals where it's possible and cannellini beans are so good for an all rounder.

This was absolutely delicious and had so much flavour. Really felt like home cooking!
