A rich, coconutty curry laksa soup for one — could self-care get any better? We don’t think so. This spiced, lemongrass-scented broth is flavoured with tamarind and finished with a gentle hum of chilli (nothing too wild), plus creamy depth from blitzed macadamias. Diced pumpkin, tofu, and a tangle of rice noodles round it out, making it a perfect solo slurp.

To Serve

A squeeze of lime and some bean sprouts would be a great addition.

Pierce the plastic film several times. DEFROSTED: microwave for 3 minutes, stir and heat for a further 1-2 minutes or until piping hot. Alternatively, pour into a small saucepan and heat gently until hot. FROZEN: microwave for 4 minutes, stir and heat for a further 2-3 minutes or until piping hot.
