Prawn, leek and barramundi gratin

A quietly luxurious dinner for two, of prawns, prime NT barra, smothered leeks and roast sweet potato, bathed in a light, creamy velouté sauce – with a lobster stock base, no less - and topped with a crunchy herbed panko crust. It’s more French bistro than nursery-style fish pie – but just as simple to throw in the oven till golden and bubbling. Close your eyes and dream of Paris.

To Serve

This would go well with a green salad, like rocket and shaved fennel, with a lemony vinaigrette, or a big pile of buttered spinach. Warm, crusty baguette on the side would be ideal for mopping up any last skerrick of sauce – but buttered mash wouldn’t go astray either.

Preheat oven (FF) to 200C and remove the plastic film. Generously drizzle the top with olive oil. DEFROSTED: cook for 25-30 minutes or until piping hot. Allow to sit for 5 minutes before serving. FROZEN: cook for 45 minutes or until piping hot. Allow to sit for 5 minutes before serving.
