There’s no denying the combination of potato, leek and chives ticks both the nostalgia and comfort boxes. It’s been a classic combination throughout culinary history for one very good reason: it just works. With all the usual suspects you’d like to see — spuds, onions, leeks and a splash of cream — we’ve also added a little parmesan for extra salty umami, then finished it with some finely chopped chives. Also, it’s ready in the time it takes to pop some crusty bread in the toaster and slather it in butter.
