Thai pork curry with lemongrass and ginger

Calling all coconut curry lovers, this one's for you. We fry up diced pork scotch in our house-made curry paste, then let it simmer slowly in coconut milk with lemongrass, ginger and kaffir lime. Chinese broccoli and baby corn are already in the mix, so you just need to spoon it over coconut rice and dig in. Fragrant, flavour-packed and just the right amount of fiery — kinda like us.

To Serve

Top with fresh coriander and serve with coconut rice.

DEFROSTED: Pierce the film and microwave for 3 minutes. Remove the film, stir and heat for another 1 minute or until piping hot. Alternatively, empty into a saucepan and heat gently until hot. FROZEN: Pierce the film and microwave for 4 minutes then remove the film, stir and heat for a further 2 minutes or until heated through. Allow to sit for a minute before serving with steamed jasmine rice or Dinner Ladies coconut rice.
