Thai pork curry with lemongrass and ginger

Thai pork curry with lemongrass and ginger

Calling all coconut curry lovers, this one's for you. We fry up diced pork scotch in our house-made curry paste, then let it simmer slowly in coconut milk with lemongrass, ginger and kaffir lime. Chinese broccoli and baby corn are already in the mix, so you just need to spoon it over coconut rice and dig in. Fragrant, flavour-packed and just the right amount of fiery — kinda like us.

To Serve

Top with fresh coriander and serve with coconut rice.

Ingredients

Pork (39%), coconut milk (coconut kernel extract (63%), water, guar gum), Chinese broccoli, water, baby corn, onion, lemongrass (1.5%), garlic, ginger (0.8%), cashew, rice bran oil, sugar, tamarind paste (tamarind 65%, water), salt, fresh coriander, red chilli, lime juice, kaffir lime leaves, green chilli, cumin ground, coriander ground, dry chilli whole, shrimp paste [shrimp (crustaceans), vegetable oil, salt, water], turmeric

* We don’t add preservatives or additives to our meals – we cook with the same real ingredients you would find in your home fridge and pantry. Some of these household ingredients do contain sub-ingredients, for example Dijon mustard contains sulphites and crushed tomatoes contain citric acid. We try to find products with as few additives as possible and always list every ingredient in our meals, both here and on the label.

    Thai pork curry

This was the first time we have tried this dish. It was very tasty and easy to prepare which is great for me. All the kids enjoyed it too and was super moist. We will order this one again.

    Absolutely delicious!

Full of flavour, plenty of pork to share between two and just the right amount of kick. This is our new favourite dish. Having just returned from Thailand we were craving authentic Thai flavors and this absolutely hit the spot.
