It’s all in the detail with our favourite Thai-influenced pie. First the coconut sauce based on a home-made curry paste – a deep, warm blend of fresh and ground spices and peanuts – then, it’s the satisfying pile of vegies (cauli, pumpkin, silverbeet, carrot, potato, peas and onions), and the final clincher: a golden lid of Careme butter puff pastry. A seriously yummy way to eat your greens (and oranges and whites...). 

To Serve

All pies love buttered mash – but you could also stay with a Thai theme and try coconut rice on the side, with a chilli sambal or sauce to fire it up. This pie has your back, vegie-wise, but you could easily double up with a pile of leafy Asian greens if you’d like.

Remove plastic film and preheat oven (FF) to 200C. Brush pastry with beaten egg or milk. DEFROSTED: cook for approximately 30-35 minutes or until the pastry is puffed and golden brown. FROZEN: cook for approximately 50-55 minutes or until the pastry is puffed and golden brown. Ovens vary, please adjust cooking times if necessary.
