Two Barramundi fillets arrive at your place raw and slicked with an umami-laden, sweet-savoury miso glaze, ready to cook until perfectly tender and flaky. They’re in very good company with roasted diced eggplant, which soaks up all that glorious flavour and a smoky soy broth that brings big Japanese energy to the bowl. Proceed with caution: this much flavour in one bowl may cause spontaneous reordering before the dishes are even done

To Serve

Serve it alongside a bowl of Asian steamed greens or over our coconut rice or super-loaded veggie rice.

Preheat oven (FF) to 200 °C. Remove the film from the tray and set aside the sachet of broth. EASY: place the tray in the oven and cook for 20 minutes (from defrosted) or 30 minutes (from frozen). Pour the broth into the tray and cook for further 5 minutes or until fish is cooked through and broth is hot. A LITTLE MORE EFFORT: place the tray in the oven and cook for 25 minutes (from defrosted) or 35 minutes (from frozen) or until fish is cooked through. Then heat the broth in a saucepan until piping hot. Transfer the fish and eggplant to serving bowls and pour over the broth.
