Middle Eastern lamb flat breads

These gozleme-inspired pairs of pita bread tick boxes you didn’t even know you had. Spiced ground lamb, flecked with mint, spring onions and spinach, makes for a nourishing, generous filling; feta and mozzarella add a layer of cheesy gooeyness that lifts wholesomeness to just the right level of indulgence. But cooking them in a sandwich press in just 5 minutes? Pure genius.

To Serve

A squeeze of lemon and your favourite chilli sauce. You could also make a rocket or tomato salad on the side but realistically? These are going to be wolfed down as is, hot off the press.

Ingredients

Pitta bread (44%) (wheat flour, water, wholemeal wheat flour, wheat starch, sugar, yeast, salt, mineral salt (450) (500), soy flour, vegetable oil (sunflower oil), preservative (262), vitamin (thiamin, folate)), lamb mince (12%), spinach, onion, tomato paste, mint, spring onion, garlic, olive oil, parsley, cumin ground, smoky paprika, salt, coriander ground, black pepper), mozzarella cheese (pasteurised milk, salt, cultures, non-animal rennet, anticaking agent (460), preservative (200)), feta cheese (milk, salt, cultures, enzymes)
