We've handled the hard part of taco night so you can focus on perfecting your famous guacamole recipe. A brilliantly spiced (flavour-packed, not heat-packed) mix of beef mince, capsicum, shredded carrot and kidney beans, this freezer shapeshifter is as versatile as they come. Wrap it in tortillas, scatter it over nachos, sandwich it into quesadillas, spoon it over rice or stuff it into baked potatoes. In short, we've got your vegetables, we've got your protein and, most importantly, we've got dinner sorted. Taco Tuesday is covered... along with Wednesday, Thursday and Friday while we're at it.

Tortillas, corn chips, rice or baked potatoes, plus all the good bits: guacamole, sour cream, grated cheese and a splash of hot sauce if you like it spicy.

Serves 2 generously or 3 as part of a Mexican feast with rice, nachos or other sides.

To Cook

FROZEN: Pierce the film and microwave for 5 minutes. Peel back the film, stir and heat for a further 2-3 minutes or till piping hot.
DEFROSTED: pierce the film and microwave for 2 minutes. Peel back the film, stir and heat for a further 2 minutes or till piping hot.
Stir the mix again and serve in hard or soft tacos or with steamed rice and salad. Great with sour cream and guacamole.
