Two Humpty Doo barra fillets get a zhuzh with our herby macadamia crust that bakes golden on top while the fish stays beautifully flaky. The whole thing sings of freshness — bright herbs, buttery nuts, local Aussie barra. Then comes the real prize, a zingy horseradish and dill cream that cuts through with just the right amount of zing. It’s vibrant, lush and exactly the kind of dinner that feels a little fancy, very fresh and always effortless.

Barramundi (75%) (fish), horseradish (horseradish, water, brandy vinegar, rapeseed oil, guar gum, locust bean gum, citric acid, sodium meta bi-sulphite, natural flavour), Panko breadcrumbs (wheat flour, salt, yeast, dextrose, water), olive oil, macadamia (1.4%), olive oil, garlic, parsley, fennel seeds, salt, lemon zest, thyme, pepper. Horseradish-dill cream (7%) (creme fraiche (pasteurised cream (milk), cultures), horseradish (horseradish, water, brandy vinegar, rapeseed oil, guar gum, locust bean gum, citric acid, sodium meta bi-sulphite, natural flavour), lemon juice, dill, chives, salt, black pepper)

To Cook

Some Prep

Preheat oven (FF) to 200C. Remove the plastic film and sauce sachet. Frozen: Place the sauce sachet in a bowl of water to defrost. Drizzle over a little olive oil, cover the tray with foil and cook in the oven for 20 minutes, remove foil and cook 20 minutes more or until barramundi is cooked through. Defrosted: Drizzle over a little olive oil, cook in the oven for 20-25 minutes or until barramundi is cooked through. Transfer to a plate and serve with the horseradish-dill cream.
