Lamb roghan josh

A deep red-brown Northern Indian curry of sweet, diced lamb shoulder braised in a home-made masala. This was one of the first two dishes we ever made at the Dinner Ladies, from a beloved old Charmaine Solomon cookbook, and it still rocks our world.  Dish it up with rice and you’re done.

To Serve

Steamed basmati rice is all you need, with a scattering of coriander leaves and whatever chutneys and pickles you find in the fridge. But if you have a bit more time, make a cucumber raita to have on the side and serve with a simple spiced rice with peas.

Ingredients

We don't add preservatives or additives to our meals - we cook with real ingredients, just like you would at home. We do occasionally use kitchen pantry staples that include some additives. For example, tomato sauce contains acetic and critic acid.

DEFROSTED: Pierce the film and microwave for 3 minutes or until piping hot. Alternatively, empty into a saucepan and heat gently until piping hot. FROZEN: Pierce the film and microwave for 3 minutes then stir and heat for a further 2-3 minutes or until heated through.

    So fresh

    This definitely tasted like it was made fresh to order- it didn’t have that icky “lambiness” that store bought can have. Spices were nicely balanced, such a good feed.
