Duck fat potatoes with garlic and rosemary

Duck fat is the secret behind the most sublimely crunchy roasties. We give sweet baby chats a double roast, first on their own to get them soft and then after a smothering of rosemary, garlic and duck fat they get a final blast to arrive at gorgeously golden crispness. (Apologies for the overload of Nigella-esque adjectives; there’s just something about duck fat potatoes...)

To Serve

Where would a roast be without roast potatoes? Serve alongside the Sunday leg of lamb, a beautiful brined chicken or a crackling rack of pork.



 

Ingredients

We don't add preservatives or additives to our meals - we cook with real ingredients, just like you would at home. We do occasionally use kitchen pantry staples that include some additives. For example, tomato sauce contains acetic and critic acid.

Preheat oven (FF) to 200C. Remove the plastic film. COOK FROM FROZEN: Cook for approximately 50-60 minutes or until crispy and piping hot, turn the potatoes a few times during cooking. Tip: for best results, transfer to a larger oven tray before cooking. AIRFRYER: Cook at 180C for 25-30 minutes. Give the tray a shake halfway through cooking time. Ovens vary, please adjust cooking times if necessary.
