However, the show's real star is a chewy, golden crust of fried shallots and toasted coconut that crisps up beautifully in the oven. Crunch, spice, layers of flavour and a little heat. Serve with a crispy shredded slaw, a big bowl of leafy salad or a side of steamed greens.

Barramundi (fish) (68%), coconut shreds (9%), coconut milk (8%) (coconut extract, water, guar gum), fried shallots (shallots, vegetable oil), onion, ginger, garlic, rice bran oil, sugar, fish sauce (anchovy extract (fish), salt, sugar),  fresh coriander, chilli, salt, lemongrass, turmeric, kaffir lime leaves,

Preheat oven (FF) to 200 degrees and remove the plastic film. FROZEN: Drizzle with oil, cover with foil and cook in the oven for 20 minutes, remove foil and cook another 20 minutes or until fish is cooked through. DEFROSTED: Drizzle with oil, cover with foil and cook in the oven for 10-12 minutes, remove foil and cook another 12 minutes or until fish is cooked through. Serve with Dinner Ladies coconut rice and steamed greens or a leafy green salad with a squeeze of lemon juice. Ovens vary, please adjust cooking times if necessary.
